Our batter rests for forty-eight hours before baking. During this quiet interval, its character deepens and its textures begin to find balance.

Every filling and sauce is prepared entirely by hand. At the oven, precision demands complete attention—where a single minute can alter the character of the shell.

Our roasted sweet potato canelé, for instance, echoes the charcoal warmth of an iron drum outside my childhood school in Asia, finished with a gentle touch of torched brown sugar.

Across every collection, the journey remains intentional: an initial greeting of vanilla and select spirits, deepening into the complex characters of unique ingredients and personal histories.
